Rich Anniversary cake

it was time to celebrate and reasons were more than one. first, it was my parents’ 23rd anniversary and second, our first car (Dhanno as we call it) completed 1 lakh (100,000) km of travel. now given the milestones achieved, it sure called for a party! that is how- this cake came about and earned the ‘best cake i’ve ever baked’ award. mind you, I’m into baking for the last 3 years. finally, a delicacy to my credit that earned so much appreciation! so here it is -the recipe of this Must try Rich Anniversary cake!

Rich Anniversary Cake

the preparation of this starts at lest 2 weeks in advance. soak dry fruits (almonds, raisins, prunes, cashews, dried dates, figs,walnuts) in rum. keep mixing the ingredients every alternate day and add more rum until completely soaked.

after a week’s time add fresh dates to the soaked mixture and add rum.

cake igredients

dry fruits

refined flour- 1 1/4 cup

castor sugar- 1 cup

sugar- 1/2 cup

eggs- 3 medium

baking powder- 1 tsp

baking soda- 1 tsp

vanilla essence- 2 tsp

orange rind from 1 large orange

rum- 3/4 peg

butter- 100 gm (1/2 cup)

oil- 1/2 cup

black current preserve/jam – 1 tbspn

ginger candies- 5-6

method:

beat butter and castor sugar.

add oil and beat again.

add eggs with vanilla essence one by one and beat.

grate orange rind into the mix and beat.

sieve refined flour, baking powder and bk soda into the mix.

add the soaked dried fruits + ginger candies + black current preserve.

mix it.

add rum.

time:

bake for 30-40 minutes at 180 degrees C in the OTG.

serve ! indulge! celebrate!
